Spring sake refers to freshly brewed sake made during the autumn and winter months. Since it is newly brewed, it carries a youthful and slightly rough character in its taste. While some types of sake, like "Jukusei Koshu" (aged sake), are matured for over three years like fine wine, most sake is typically consumed within a year of brewing. Spring sake allows drinkers to enjoy the vibrant, just-brewed flavors of fresh sake.

Over time, sake naturally matures, undergoing subtle flavor transformations through the summer and autumn seasons. This means that spring sake is unique—it offers both the freshness of new sake and the evolving depth of flavor as it matures.


Characteristics of Spring Sake

Release Timing:

Spring sake, often labeled as "Shinshu" (new sake), is typically released by March. Common terms on the label include "Hatsu-shibori" (first pressing) or "Shiboritate" (freshly pressed), emphasizing its crisp, fresh, and youthful nature.


Flavor Profile:

The most distinctive characteristic of spring sake is its refreshing, vibrant taste. To preserve this freshness, many spring sakes are bottled and shipped without undergoing pasteurization (a heating process used to sterilize sake).

During the fermentation process, carbon dioxide naturally forms in sake, but it gradually dissipates over time or due to pasteurization. Because spring sake is often unpasteurized, it retains a light effervescence that enhances its crisp, slightly tangy flavor, making it incredibly refreshing.

Although some spring sake is produced using traditional brewing methods, it is typically not aged, resulting in a floral aroma with a hint of pleasant bitterness.


Color:

Most sake undergoes filtration to remove color. In aged sake, natural hues develop over time, but since spring sake is not aged, it usually appears crystal clear.

However, celebratory spring sake may sometimes be subtly tinted using natural pigments to create a festive appearance.

Spring sake labels often feature soft pinks, fresh greens, and other bright seasonal colors. In Japan, spring marks the beginning of a new academic and business year, making this sake popular for graduation parties, entrance ceremonies, and job promotions.
